It is a structured, powerful, and complex red, with a fruity and spicy profile and an enveloping flavor texture. Vinification takes place in cement vats and the long aging in new barriques, followed by a period in bottle, contributes to defining a technical and precise style.
Origin
This wine is made in Veneto, from vineyards located in the municipality of Lonigo, in the Colli Berici area. How it is produced
The Cabernet Sauvignon, Cabernet Franc, and Merlot grapes are hand-harvested between late September and early October, with careful selection of the bunches. After harvest, the Merlot grapes are left to dry in a fruit loft for about 20–30 days. Fermentation takes place in cement vats at natural temperature and continues for 40 days. The wine then ages in new barriques for at least 24 months and completes its maturation with a further 12 months in bottle before release.
Tasting notes
In the glass it shows a red color with violet hues, evolving over time toward garnet reflections. On the nose, it opens with hints of blueberry, currant, and wild blackberry, complemented by notes of moss and spices. On the palate, it is powerful, enveloping, and complex, with a well-defined balance; there are notes of plum jam and wild berries, followed by delicate nuances of pepper, perennial herbs, and a reference to clay soil, with a coherent and persistent finish.
Pairings
On the table, it pairs well with roasts and grilled red meats, where its structure and intensity match robust preparations. It also accompanies medium-aged cheeses, offering a good balance with their savoriness and texture.
