Description
Giuseppe Quintarelli's Ca' del Merlo red wine is born in vineyards located in the municipality of Negrar, in the magical terroir of Valpolicella.
It is produced with Corvina, Corvinone and Rondinella grapes, to which Cabernet Sauvignon, Cabernet Franc, Nebbiolo, Croatina and Sangiovese grapes are added. After pressing, the grapes ferment in contact with native yeasts. Finally the wine ferments a second time on the Amarone pomace, as per typically Venetian tradition. The wine thus obtained ages in large Slavonian barrels for approx. 7 years.
It is characterized by a garnet red color. The nose opens with a spicy bouquet, with pleasant hints of black pepper, green cardamom and cinnamon, enriched with notes of cherry jam, withered flowers, dried plum and cinchona. On the palate it is powerful, pleasantly structured and with a savory and persistent finish.
Perfect to accompany roast partridge.
