Description

The Cabernet Franc from I Clivi is a pure red wine coming from a 40-year-old vineyard situated on the hills of Buttrio, in the province of Udine. The “ponca” soils, characteristic of the area, provide structure and savoriness, while the southeast exposure favors full ripening of the grapes.

Winemaking takes place in concrete with submerged cap, with spontaneous fermentation on indigenous yeasts and aging on its own lees. This technique allows for a gentle extraction of phenolic compounds, maintaining the balance between fruit and freshness.

The bouquet combines notes of strawberries, blueberries, raspberries, and blackcurrants with smoky, humus scents, violet, and herbal nuances. The palate is fresh and savory, with a saline finish that enhances the wine's drinkability.

Ideal with light game, aged cheeses, or dishes based on grilled vegetables.
