Venezia Giulia IGT Refosco d'Istria Imà 2013 Parovel
Description
The Refosco or Refosc Imà di Parovel originates in the Karst or Kras, borderlands between Italy and Slovenia. The vineyards grow in San Dorligo della Valle or Dolina, in the province of Trieste. The word "Imà" derives from the Slovenian expression "on ima", "he has", referring to the structure and fullness that this wine possesses.
It is obtained only from Refosco grapes usually harvested at the end of September, when the grapes are slightly overripe. The must undergoes a pre-fermentation maceration at low temperatures, followed by alcoholic fermentation in steel and malolactic fermentation in French oak barrels, where the wine remains for 8–10 months. Ageing ends in the bottle and lasts at least 6 months.
Intense ruby red colour, the nose reveals aromas of red fruits, aromatic herbs such as thyme and rosemary, hints of leather and licorice. The taste is fresh and mineral, with a persistent finish.
Ideal in combination with red meats and roasted and stewed game.
