Description
This pure Vermentino from Notte Rossa is produced near the Salento coast, an area characterized by a temperate microclimate thanks to the constant influence of the sea. The favorable soil and climate conditions allow for highly expressive grapes, cultivated with care to best enhance the varietal characteristics of the vine.
The harvest takes place at the end of August; the grapes are destemmed and kept in contact with the skins for a few hours at low temperature, which encourages the extraction of the finest aromas. This is followed by gentle pressing and fermentation in steel tanks at a controlled temperature of 15°C for around two weeks. The wine then refines in steel to preserve its freshness and fragrance intact.
It appears a bright straw yellow in the glass. The bouquet is elegant, with notes of white flowers, citrus, and hints of Mediterranean scrub. On the palate, it is fresh and lively, with hints of thyme and rosemary that enhance its minerality and leave a pleasant clean sensation.
It pairs perfectly with fish dishes and light appetizers.
