What kind of wine is it?
Verona Rosso by Dal Moro is a full-bodied red wine produced in the province of Verona from Merlot , Syrah , and Corvina Veronese grapes. This blend stands out for its solid structure and aromatic complexity, making it suitable for aging. Vinification involves fermentation in stainless steel at a controlled temperature and aging in oak barrels , with a small portion in barriques, elements that contribute to an elegant and decisive profile.
Where does it come from?
The grapes come from vineyards located in the Valpolicella Classica area , between Novare di Negrar and Val d'Illasi, east of Verona. The area offers a temperate climate with wide temperature ranges and morainic soils, rich in galestro and calcareous marl . Altitudes between 200 and 350 meters favor slow ripening, which enhances the wine's aromatic concentration and tannic structure.
How it is produced
The Merlot and Syrah are harvested in mid-September, followed by alcoholic fermentation in stainless steel and malolactic fermentation. The Corvina Veronese is harvested in October, where it is placed in the drying room for partial drying and then undergoes vinification with a long maceration . After phenolic extraction, the wine ages in oak barrels and partly in barriques. After six or seven months, the varietals are blended and the wine rests further in the bottle, revealing a balanced and profound profile.
Tasting notes
In the glass, it displays an intense ruby red color with purple highlights. On the nose, aromas of red fruit jam , morello cherry, and dried rose emerge, enriched with notes of black pepper and tobacco. On the palate, it is enveloping and warm, with soft tannins and a balanced flavor. The finish is persistent, with fruity and spicy aftertaste that leaves a sensation of fullness.
What does it pair with?
This wine pairs well with beef carpaccio with extra virgin olive oil and parmesan shavings, pasta dishes like tagliatelle with wild boar ragù , and game dishes. Among cheeses, it pairs well with medium-aged Pecorino and Monte Veronese. A typical local pairing is risotto with Amarone, which highlights the wine's structure.
When to serve it
Dal Moro's Verona Rosso is ready for consumption two years after the harvest and maintains its structure for up to five years if stored properly. It is best served at 18-20°C in large glasses, allowing for effective oxygenation and enhancing the aromatic and flavor profile.
