Description

Produced by Chanterêves, a winery founded in 2010 by Tomoko Kuriyama and Guillaume Bott, Bleu Cerise is an unconventional red wine that reflects an artisanal and terroir-respectful approach. Coming from parcels mainly located in the Hautes Côtes de Beaune, the wine is the result of a blend of Gamay and Aligoté, cultivated according to uncertified organic and biodynamic practices, with particular attention to biodiversity and soil vitality.

The vinification involves a prolonged pressing of about six hours, followed by a spontaneous fermentation with pied de cuve. The aging process lasts for 12 months in oak barrels of various sizes, without fining or filtration and without the addition of sulfites, in order to preserve the integrity and purity of the fruit.

On the nose, it opens with fresh and floral aromas, notes of strawberry, ripe lemon, and a hint of peach. On the palate, it is light and lively, with sharp acidity provided by the Aligoté and a delicate yet persistent structure. The finish is dry and savory, making it a unique and pleasantly refreshing wine.

Ideal to pair with light appetizers, vegetarian dishes, or raw fish, where its freshness and liveliness enhance the delicacy of the flavors.
