Description

This Pinot Noir from the Les Plants Nobles collection by Ropiteau Frères comes from carefully selected vineyards, cultivated on clay-limestone soils characterized by significant temperature fluctuations. These conditions allow for optimal grape ripening and enhance the varietal's aromatic expression, resulting in a round and generous wine that reflects the Maison's style.

The winemaking process begins with cold maceration, followed by a gradual fermentation up to 30°C. Aroma extraction is achieved through punching down and pump-overs, followed by pressing and blending of the free-run and press wine. One third of the cuvée ages in oak barrels toasted over an open fire, lending the wine sweetness, length, and toasted notes that enrich its profile.

The color is deep red with ruby highlights. The nose reveals warm notes of red fruit, peach, vanilla, coconut, and toast. On the palate, it is full-bodied, with dominant aromas of cherry and blackcurrant accompanied by a hint of licorice that adds depth and character.

It pairs excellently with cured meats, grilled meats, pizzas, barbecues, or aged cheeses.
