La Paille from Domaine du Gringet is a dry white wine from Savoie made from Gringet grapes. It displays a fresh profile and precise structure, with a balance between tension and volume. Where it comes from
This wine is produced in Ayze, at the foot of the Alps, in an area with a cool climate and significant diurnal temperature variation that enhances acidity and vibrant aromas. The vines, planted in the 1930s on a south-facing slope, root in white marl, a limestone-clay soil that brings out salinity and mineral notes. The microclimate, with steady ventilation and slow ripening, shapes a style focused on freshness and good persistence.
How it is made
Gringet grapes are harvested and undergo a slow press of 4–7 hours for gradual juice extraction and lower oxidative notes. After 24 hours of static settling, fermentation takes place spontaneously with native yeasts. The wine ages for 9 months on fine lees in egg-shaped concrete vessels, followed by 10 months in bottle. The absence of wood preserves purity and aromatic integrity.
Tasting notes
In the glass, La Paille is straw yellow with greenish highlights, clear and consistent. The nose reveals white fruit, fresh flowers, and a mineral streak reminiscent of chalk and wet stone, with light citrus nuances. On the palate, it is dry, with pronounced acidity, ample texture and a savory backbone balancing tension and volume. The finish is marked by a lingering saline note.
Food pairings
Freshness and salinity support fish dishes, shellfish, baked fillets, and delicate sauces. The pairing also works well with soft cheeses and Alpine specialties like Savoyard fondue and raclette. Its structure stands up to moderately rich dishes, and it complements trout tartare and seafood risottos.
