What kind of wine is it
Le Feu is a dry white wine produced by Domaine du Gringet, made from Gringet grapes, a native variety from Savoie. This white displays a fresh style and a mineral character, with a full but agile structure. Spontaneous fermentation with indigenous yeasts and ageing on fine lees in cement preserve aromatic purity and tension, so the identity of the territory clearly emerges.
Where does it come from
The grapes are grown in Ayze, at the heart of Savoie, at the foot of the French Alps. The vineyards are situated on a south-facing slope, which ensures balanced ripening. Soils made of red marl rich in iron oxide impart pronounced minerality and a salty note, features that reflect the mountain character of the area.
How is it made
Production begins with gentle pressing lasting about seven hours for carefully controlled must extraction. Fermentation occurs spontaneously thanks to indigenous yeasts, without forced interventions. The wine matures for nine months on fine lees in egg-shaped cement vats, with no fining or filtration. It then rests for ten months in the bottle, allowing complexity and stability to increase.
Tasting notes
In the glass, Le Feu appears straw yellow with bright highlights. On the nose, melon, pear and mandarin emerge, with hints of licorice and a distinct salty note. On the palate, it offers a round texture and lively freshness, with taut progression and long persistence that highlights the minerality of the terroir.
Pairings
This wine pairs easily with fish and shellfish dishes, where acidity and saltiness enhance delicate meats. It also goes well with soft cheeses and with traditional Savoie dishes based on cheese and potatoes, such as tartiflette. The full but not heavy structure accompanies regional preparations without overpowering them.
When to serve
Le Feu is ideal as an aperitif and during meals, when a precise taste and salty finish are desired. Serve well-chilled, around 10 °C, in medium-sized glasses to enhance the fruity and spicy notes. The wine is immediately enjoyable and, thanks to ageing on the lees and in bottle, evolves well for a few years if properly stored.
