Description
The Vin Santo Occhio di Pernice from Castello di Radda is crafted with a traditional Tuscan blend based on Sangiovese, Canaiolo, and Colorino grapes. It comes from vineyards facing south at an altitude of 450 meters in the municipality of Radda in Chianti. The clay-limestone soil rich in skeletons, combined with careful manual selection of the grapes, ensures a must of high aromatic concentration.
After harvesting, the grapes are left to dry on racks for several months and then pressed using a traditional wine press. The must ferments slowly in small barrels thanks to indigenous yeasts and remains aging for at least four years in environments subject to significant temperature variations. This is followed by further rest in the bottle for at least three months before sale.
The appearance is dense, garnet red with golden reflections. The aromatic profile is complex and enveloping, with hints of dried apricot, dried figs, dates, toasted almond, and sweet spices like cinnamon and cloves, plus an intense note of chestnut honey. On the palate, it is sweet, deep, and creamy, with a long-lasting finish.
Ideal with dry pastries or spoon desserts.
