Description

The Vin Santo del Chianti of Fattoria Pozzolatico is produced from Trebbiano and Malvasia grapes, carefully selected in September and harvested between the end of this month and the beginning of October.

These grapes are kept for an estimated time of 3-4 months in the historic attics for centuries dedicated to this method of production on the farm. In these rooms where a perfect microclimate is created, characterized by very low humidity and perfect airing, the drying phase takes place. After the drying phase the grapes are squeezed, rigorously done by hand using a press. The must produced is thus ready for the period of fermentation, maturation and refinement lasting 8 years which takes place in the characteristic barrels and casks destined for it.

This Vin Santo del Chianti is characterized by an intense amber color and ruby nuances. The nose opens with a very soft but at the same time intense bouquet characterized by nuances of walnut, chestnut honey, almond, pepper and caramel. On the palate the soft spicy notes are enhanced accompanied by sweet nuances. An intense tasting with a very long finish.

Excellent for meditation, it perfectly accompanies biscuits, in particular Tuscan cantucci, and blue cheeses including sweet gorgonzola.
