What kind of wine is it

This dealcoholised white sparkling wine from De Stefani is made from Glera grapes grown in the Prosecco area in Veneto. The fermentation occurs only once at a controlled temperature and, subsequently, the alcohol is removed by vacuum heating to preserve the natural aromas. The result is a light and harmonious sip with a fruity profile and distinct freshness, designed to offer immediate and versatile enjoyment.

Where does it come from

The Glera grapes come from Veneto, in the Prosecco area, in the Treviso region. The zone has soils with a high concentration of clay, a feature favourable for viticulture and useful for providing a balanced and clean aromatic profile. Its Treviso origins hint at a style that delivers freshness and easy drinking, characteristics retained in the dealcoholised version.

How is it produced

Vinification begins with gentle pressing of the grapes and cooling of the must down to 0°C to protect the most delicate aromatic components. Fermentation occurs only once at 15°C. After this stage, the alcohol is removed by vacuum heating up to 30°C, using low temperatures to preserve the wine's natural aromas and achieve a sparkling wine with a fine, persistent perlage.

Tasting notes

In the glass, it shows a straw yellow colour with greenish highlights, accompanied by a fine and persistent perlage. The nose reveals fruity aromas with hints of Golden apple and a nuance of exotic notes. On the palate, it is light and harmonious, with good freshness and a balance that makes it pleasantly drinkable; the finish remains consistent, favouring cleanliness and immediacy.
