Zamò Grigio is a white wine produced exclusively with Pinot Grigio grapes.

After harvesting, the grapes are destemmed and pressed, with the must remaining for a day in spontaneous static decantation. The following day, after decanting to eliminate coarse deposits, fermentation begins with selected yeasts in steel tanks at a controlled temperature of 18°C.
