Extra Brut & Pas Dosé

In bubbles, if the final sugar residue of the wine does not exceed 6 grams per liter of wine , the sparkling wine can be labeled as Extra Brut , while if the quantity is less than 3 g / l, it can be said not Dosato (or also Pas Dosé , Dosage Zero or Nature ). The label that owes the rediscovery of this style is Laurent-Perrier's "Ultra Brut" Champagne, which was re-proposed by Bernard de Nonancourt in 1981 inspired by the cuvée launched in 1889 by Mathilde-Emilie Perrier and which for almost a century it was simply called "Grand Vin Sans Sucre". The presence of an increasing number of low-dose labels also among the Charmat method sparkling wines testifies to the great success achieved over the years by this style.

Extra Brut and Pas Dosé tend to enhance the freshness without altering the original characteristics of the sparkling wine: they are therefore among the most appreciated by connoisseurs . Excellent as an aperitif , this type of sparkling wine goes well with oily fish such as salmon and eel, to marry divinely with crustaceans and fried fish .
