Chocolate - Dark and passionate

Giving chocolates, perhaps together with a bouquet of roses, is an inevitable tradition on Valentine's day. Symbol of sweetness, love and passion, chocolate (whose Greek term stood for "drink of the gods") was so precious that it was used as a currency and was a very expensive food, allowed only to nobles. But what does chocolate go with? The key element for successful pairing is the amount of cocoa in the chocolate. Milk chocolate goes well with fortified wines such as Passito di Pantelleria, Marsala, Sherry or Porto Tawny. On the other hand, bitter chocolate , like dark chocolate, can be combined with spirits , but also with soft red wines , with a great structure and "meditation". The great Cabernet Sauvignon, Sagrantino di Montefalco, Amarone, Primitivo di Manduria, Barolo Chinato or Agricanto, the Raboso di Paladin liqueur, are particularly suitable for this type of pairing. One of the most successful marriages is undoubtedly the one with Rum , which prefers dark chocolate, according to the rule that longer aging must correspond to a greater percentage of cocoa. Grappa and chocolate enhance each other and give an equally satisfying experience, if you let a piece of chocolate melt in your mouth after a sip of distillate.
