The wine to pair with mushrooms depends on the preparation: elegant reds for porcini, more structured wines for risottos, and higher-intensity pairings for black truffle.

Mushrooms and black truffle share an earthy, forest-floor note, but their intensity and texture vary with the dish. Sautéed porcini are delicate and aromatic; a risotto finished with butter adds butter and Parmigiano; while a sliced steak with fresh truffle brings red meat and a very persistent aromatic profile. There isn’t a single right wine: the idea is to choose a glass with enough structure to support the dish without masking the earthy, umami side of mushrooms and truffle.

Sautéed porcini with garlic and parsley

In the most classic preparation the mushroom remains the star: garlic and parsley add a pungent, green note, but there isn’t significant richness to balance. An overly tannic red risks drying the palate and accentuating the mushroom’s slight bitterness. What you need is an elegant wine with gentle tannins, pure fruit and good freshness. Pinot Noir from Alto Adige is a spot-on choice: its red fruit and fine-grained tannins accompany the mushroom without covering its earthy profile. A not-too-aromatic white can also work, especially if the preparation is very simple and the mushrooms are top quality.

Porcini risotto, finished with butter

Butter-and-Parmigiano finishing adds richness and creaminess to the mushrooms’ earthy flavor, so there’s more substance to balance than with sautéed porcini. A red with present but not aggressive tannins can suit the dish well, especially if it also has good freshness. Langhe Nebbiolo is a balanced choice: it has Nebbiolo’s structure but generally a more immediate, less austere profile than Barolo and Barbaresco. If the risotto is topped with black truffle, you can step up the intensity with a Barbaresco, opting for an elegant, not overly powerful label. The mistake to avoid is a red that’s too alcoholic and concentrated, which would weigh down the dish’s creamy component.

Tagliatelle or pappardelle with porcini

Fresh egg pasta brings a soft, rounded element, while porcini sauces are generally less concentrated than a butter-finished risotto. You want a medium-bodied wine with fine tannins and an aromatic profile able to engage with the mushroom without overpowering it. A Pinot Noir from Burgundy is particularly apt: red fruit, freshness and forest-floor notes create a natural bond with porcini. A riper Pinot Noir from Alto Adige can offer the same balance, with greater immediacy and a fine ability to accompany egg pasta.

Black truffle risotto, finished with butter

Black truffle has a spicier, earthier profile than white truffle and, especially alongside butter and Parmigiano, can handle a wine with more structure. Here the tannins must already be well integrated: an overly young or aggressive red would smother the truffle’s aromatics. Barbaresco is one of the most convincing choices thanks to its combination of tannin, freshness and aromas that can engage with the truffle’s character without overpowering it. A well-structured Nebbiolo can also work, especially if the risotto remains delicately finished.

Sliced beef with shavings of fresh black truffle

Here the wine has to contend with two key elements: the structure of the meat and the truffle’s lingering aromatics. You need a red with enough tannin and depth for the sliced steak, yet with the elegance and complexity not to overshadow the truffle. Barolo is the classic choice when the meat is substantial and truffle takes center stage: Nebbiolo’s structure supports the meat, while its aromatic component can echo that of the truffle. Barbaresco is an excellent alternative, especially if you’re after a more lifted, less austere profile.
