What kind of wine is it?
Aglianico del Vulture Grifalco by Grifalco is a still red wine made from pure Aglianico grapes grown according to organic principles in the Vulture area of Basilicata. Its style is shaped by temperature-controlled steel vinification and aging in second-use French oak barrels, resulting in a clean profile marked by noticeable tannins and a distinct freshness.
Where does it come from?
The grapes come from Grifalco's vineyards located in the communes of Venosa, Maschito, and Forenza, at the heart of the Vulture area in Basilicata. This origin defines the wine’s identity and shapes its character, ensuring a recognizable and consistent signature in every glass.
How is it made?
Harvesting is done by hand with selection in the vineyard, followed by a secondary sorting in the cellar through linear destemming, removing green residues to work only with ripe berries. After gentle crushing and destemming, fermentation takes place in steel tanks at controlled temperatures not exceeding 28 °C, with about ten days of maceration on the skins. Once racking is complete, the wine ages on fine lees in second-use French oak barriques and tonneaux for 6–12 months, undergoes malolactic fermentation, then stabilizes in steel before being bottled, finishing with at least six months of bottle aging.
Tasting notes
In the glass, it shows a deep ruby red color. The bouquet opens with a mineral touch of graphite, followed by cocoa, coffee, and hints of embers, complemented by red fruit highlights and black pepper. On the palate, it is balanced and enveloping with medium structure, smooth tannins, and lively acidity that supports a persistent and satisfying finish.
Food pairings
At the table, it naturally pairs with meats and cheeses, enhancing the richness of dishes through its balanced sip, supported by freshness and well-integrated tannins. The toasted and spicy notes in the background complement flavorful preparations without overpowering the aroma of the dish.
When to serve it
This red is suitable for meals and convivial occasions, when you want a wine with presence that still goes down smoothly. If opened young, allowing it to breathe briefly in the glass will help soften the toasted notes, making the profile even more harmonious while maintaining its freshness and tannic structure as central features.
