Description
The Bourgogne Hautes Côtes de Beaune by François Mikulski is a Chardonnay from two vineyards cultivated with unregistered organic practices. The parcels are located near Nolay, which contributes two-thirds to the production, and Meloisey, which completes the remaining third. This designation expresses the fresher and more authentic character of the Côte de Beaune heights.
The soils are clay-limestone in nature, capable of retaining moisture and providing a good mineral base to the wine. The altitude and ventilation of these areas promote a slow ripening of the grapes, giving the wine aromatic brilliance and balance.
The olfactory profile is delicate, with hints of white-fleshed fruit, citrus, and light floral nuances. On the palate, it is fresh, linear, and dynamic, with a mineral note accompanying a clear and clean finish, making it a very drinkable and territorially typical Chardonnay.
Ideal with seafood appetizers, fresh cheeses, or grilled vegetables.
