Originally from the Caribbean, rum is a liqueur generally obtained from the distillation of fermented cane molasses, often flavored with herbs in order to enrich its aromatic range. Almost colorless, if fresh, it takes on a color ranging from yellow to brown, following aging, to which the addition of caramel sometimes contributes. According to the origin it is possible to distinguish the rums in Jamaica, Cuba etc. Particular attention deserves the rum of the French Antilles, Agricole, obtained from the juice of the sugar cane that is produced in the islands of S. Bartolomeo, Guadalupe, Les Saintes and Martinique. Agricultural rums turn out to be more complex, with floral and fruity scents which, with aging, are enriched with the balsamic aromas given by the wood; these are particularly structured and complex spirits, more suitable for aging, the only ones that can boast the denomination of controlled origin. Ideal to serve straight, in the Blanco version, rum is the ingredient behind various cocktails and long drinks.
